Pumpkin
fritters recipe

perfect mid-day snack or serve it with high tea

Summary: If you are
tired of the same old snacks and munchies in the
afternoon, you might want to try something
different: pumpkin fritters. They are
relatively easy to make and kids love them.

Ingredients
1 cup cooked pumpkin
2 cups flour
A pinch of salt
1 egg
1 cup milk
2 tablespoons sugar
600 ml (24 oz.) cooking oil

Instructions
You will also need a frying pan,
round spoon, wooden spoon, and a mixing bowl.
Sieve and pour the two cups of flour in a bowl, add a teaspoon of salt, the egg, milk and mix well using the wooden spoon. Ensure the pumpkin is well cooked and mashed. Then add a cup to the mixture and stir well into the mixture.
Heat the cooking oil and then reduce the heat to moderate. Use the round spoon to scoop out and put on the pan to fry. When they are golden brown on one side, turn to fry the other side. As you remove, ensure that you drain off the excess oil so that you don’t consume too much fat.
Serve hot and sprinkle the sugar on them. Makes a good
mid-day snack with a cup of tea or hot
chocolate.
