Rice
in milk or Arroz con leche

Summary:
Rice and milk are used in many cuisines to make
delicious dishes, mostly desserts. The
Japanese use it to make rice
cream and Indians
use it to make kheer. Accordingly, while
you can follow this recipe but feel free to add
your own little twist.
Ingredients
4 cups of milk
1 cup of rice (not pre-cooked)
1 cinnamon sticks
1 lemon
The zest of the lemon
1 pinch salt
1 cups half-and-half
1 cup of sugar
Cinnamon, for sprinkling
Optional raisins to decorate

Process
Mix milk, rice, cinnamon sticks, lemon zest and salt. Put in a pan and bring to a boil.
Once it boils, turn down the heat and simmer until the rice is cooked (in about 20 minutes).
Once the rice is cooked (do not worry if it over-cooks) add the half-and-half.
Add the sugar now. You may add more sugar to taste.
Turn off the stove and remove the pan.
Discard the cinnamon sticks.
Let it cool. Serve cold and sprinkle with
cinnamon.
