tofu-vegetable scramble. |

Ingredients

2 Eggs
1 carrot
8 snow peas
1 block of firm tofu
1 tablespoon of oil
1/2 cup of dashi broth
1 tablespoon of soy sauce
2 shiitake mushrooms
Salt
11/2 tablespoon of sugar
11/2 tablespoon of sake (Japanese rice wine)

1- Drain the tofu and cut it into small pieces by hand
2- Prepare the vegetables. Cut shiitake mushrooms and carrots in julienne style. Boil the snow peas in pod. When soft, remove from the pods.
3- Heat the oil and sauté mushroom and carrots. After a few minutes add the dashi, soy sauce, sugar, salt, and sake.
4- Add the eggs and move the mixture. Wait until it is cooked.
