Organic oatmeal recipe

There is no doubt that kids love cereals and they will eat it any time of the day.  In any case aggressive advertising by processed food companies has convinced the kids that eating cereal is cool and fun.

The big problem is that we might be making our kids obese by giving them cereals as breakfast and snackChildhood obesity eventually leads to diabetes and a lifetime of poor health.  Latest data from Consumer Report shows that some cereals are actually more than 50% sugar by weight.  Ouch!

And since we are addicted to sugar, the food companies actually sell cereals with higher sugar content in the US than in other countries.

So my advice is that you throw out whatever boxed cereals (though it may be painful for moms of kids that are picky eaters) you have inside the house and switch to steel-cut, organic oats and make oatmeal from scratch every day.  This is how I do it.

Take a teaspoon of organic butter and put it in a saucepan.  As it starts to melt put one cup of oatmeal and then stir it till it starts to smell good and turns slightly brown.  Then add two cups of water, drop a few prunes, and put it on slow heat to cook for about 10 minutes or whenever it absorbs all the water and becomes soft.

Then add milk depending on the consistency that you like.  I also soak 5 almonds overnight and I add them just before serving.  To make it sweeter, use honey instead of surgar.
