How to become a meatless dieter?

I grew up in a vegetarian family and did not start to eat meat until I went to college. Over the years, I learned to enjoy many meat and fish dishes and still do, but due to concerns about health (a pound of meat almost always has more calories than vegetables) I limited eating meat to occasions when I had no choice (dining out, parties, etc.).
It turns out that I have been doing a lot to help fight global warming even without realizing it. According to the United Nations Intergovernmental Panel on Climate Change, we should have a meat-less day. I know for hundreds of millions of people around the world, that is already the case, but definitely in the developed world, we all could eat less meat.
Why eating less meat is a good idea?
Well, first of all, we have industrialized meat production and that means we raise cattle and process meat the way we manufacture cars. That means lots of greenhouse gases are emitted.
While long term steps can be taken fight climate change, by giving up meat, we can have an immediate impact on demand.
Can one survive without eating meat?
Absolutely. I am in great health as a “vegetarian” (for all practical purposes). Almost all dishes can be made without using meat and you can try a whole bunch of new dishes made from delicious vegetables and grains.
